Valérie Gavaud and Bill Moysan have been running the smallest Domaine des Chablis since 2010: Le Vin de Deux only covers one hectare! Valérie inherited the plots near Fleys - also in the Premier Cru Mont de Milieu - from her mother; his family has been making wine there for over a century. They sold their grapes to the cooperative for the first two years - they've only bottled their own bottles since 2014. For health reasons, Bill was away for a while, but luckily Valérie has family in the area and Uncle Christian was able to take over. In addition, a couple of well-known friends came to help them: Alice and Olivier de Moor, themselves legendary winegrowers in Chablis, took over the vineyard and still support them today. From the start, Valérie and Bill managed their vineyard in biodynamics. Mont de Milieu is one of the region's most renowned premier cru sites. It is located between Fleys and Chablis, above the D91, on the right bank of the Serein - and just a little east of the legendary Grands Crus. The small plot that Valerie and Bill cultivate here faces southwest, which means it gets enough sun - which is worth a lot in the cold climate here. The soils could not be more typical of the region: limestone and limestone marl from Kimmeridgia. Both want to keep the extraordinary terroir as pure as possible. Instead of big machines, horses help them in the vineyard; is harvested by hand; And in the semi-underground cellar of Valérie's great-great-grandmother, there is no fancy, filtering or brewing of yeast. They only use sulfur at the very end and only in tiny amounts.
