We are a small family natural winery, farming biodynamically on almost 2 hectares of vineyards, which are located in different areas near our village Boretice. We produce wines in small batches with a focus on quality. The entire annual production is aged in different wooden barrels (acacia, American oak or French oak) for different lengths of time. However, at least 10 months. We cultivate the vineyards exclusively by hand include harvest. In the cellar we only finish what nature started. :-) The wines ferments spontaneously without controlled fermentation in barrels or open vats - it means we do not add any selected yeast. We leave the wines to mature for a long time on sediment without sulfur to best reflect the local terroir. We do not clarify or filter the wines. We use pumps very rarely, and trying to do everything by gravity - bottling as well. We choose these winemaking procedures in order to achieve a readable wine taste with a believable story... We are also producing Pet-nats in a small series. 2 or 3 kind every year. We let the wines freely tell their story and do not interfere too much with their natural development.
