With the help of Sébastien Agelet from Domaine de Mena, Thomas Ollivier embarked on the Nature Wine adventure in 2016 by vinifying an old, almost abandoned family plot of Carignan, located near Paziols in the Corbières. Manual harvest in boxes, semi-carbonic macerations and whole bunches. In the cellar, the wines have been worked with a minimum of intervention, indigenous yeasts and no added sulphites since 2019. (The vines have been worked organically since 2016, but no certifications because the estate is still too small.)
