Sylvian Pataille leads a winery with great passion in Marsannay, in the northernmost part of the Côte de Nuits, near Dijon. Having accumulated a vast wealth of knowledge, thanks to numerous collaborations with wineries in Burgundy, Sylvain decided to set up on his own at the end of the 90s with a very specific idea: to produce great wines in the most natural way possible, eliminating all chemicals used in the vineyard and additives in the cellar. The vineyard is managed by applying the principles of organic and biodynamic agriculture, using only sulfur, copper in very low quantities and other natural preparations. The vines find their balance within an uncontaminated ecosystem and produce quality grapes. To avoid compacting the soils, Sylvian has reintroduced the use of the horse between the rows, in order to keep the soil always soft, vital and rich in biodiversity. The vinification takes place with minimal oenological intervention and maximum preservation of the varietal expression of the grapes (Chardonnay, Pinot Noir and Aligoté) and of the Marsannay terroir. As is customary in the area, Sylvian cultivates. The deep knowledge of the places and of the pedoclimatic differences between the individual vineyards led him to prefer parcel vinification.
