In 2008, with 10 years of experience across France and the world, Nicolas Grosbois took over the reins of the family estate in Panzoult, in AOP Chinon. Located in the heart of the Loire Valley, on the right bank of the Vienne valley between Tours and Saumur, it extends around the site of the "Pressoir" built during the 15th and 16th centuries. This exceptional place, ideally located in the middle of a hillside (sheltered from floods), seduced at the time by the richness of its terroirs, favoring a multitude of cultures, limiting the risk of famine. From century to century, the built heritage is manhandled by time but, thanks to a peasant spirit, the successive managers resist the temptation to regroup, leaving intact the diversity of plots, whether wine or cereal or bocage. Today Cabernet Franc, the emblematic grape variety of the Chinon appellation, reigns supreme over the 15 hectares (ha) of vines. The 25 ha of cereals grown in rotation - sunflower, barley, wheat, fodder meadow - and the 10 ha of meadow - welcoming 12 Black Angus cows - complete this multifaceted picture. All the productions are cultivated in organic farming (Ecocert certification since 2010) and Demeter certified in 2019. The vines are mainly located on the top of the domain (scree of millarge, yellow tuffeau characteristic of the Chinese) as well as on two islets in the valley (composed of gravel on limestone). The whole is made up of 16 plots, the vast majority of which (11.7 ha) make up the Gabare cuvée, constituting the heart of the estate. The Clos du Noyer, flagship cuvée, comes from the eponymous plot (1.24 ha) located at the top of the hill on a millarge soil; this unique terroir, very representative of the chinese character, makes it possible to produce great wines with exemplary regularity. Montet, comes from a vineyard (2ha) located east of the village of Panzoult on a limestone slab covered with rolled gravel; also specific to the Chinese terroir. The last born, Cloture, comes from a plot on the edge of the domain (0.6 ha), planted in 1910 on millarge soil. The yields, limited to 40hl / ha for the Gabare cuvée and 30hl / ha for the Clos du Noyer, Montet and Cloture cuvées, meet the criteria defined in 1937 when the Chinon appellation was created, which limited production to 40 hl / ha. This control of yields allows great regularity in the quality of the wines. In the cellar, each plot is vinified separately in small concrete tanks to respect the varietal / terroir harmony. The juices ferment spontaneously, without adding sulfur thanks to indigenous yeasts present on grapes and in the environment. Fermentation and maceration do not exceed 25 to 30 days. Wines continue their aging in the same concrete tanks and in the same concern for the integrity of the grape variety and the plot, to preserve the finesse and fruity energy specific to our terroirs.
