I am Sylvain Leest, winemaker in Faverolles en Berry, settled since ‌2014, on a little over 4 ha, with a dozen grape varieties; my first vinifs took place in 2016, with two reds (Gamay and Cot / cabernet Franc / cabernet Sauvignon) and a white (Sauvignon, blended with the 2017). Organic conversion arrives with the 2017s, as does the gel ... and therefore another white (Sauvignon), blended with the 2016 and a red cuvée (Gamay) 2018, a great year, with Sauvignon, Orbois Blanc, Gamay, Cot / Cabernet, Pinot Noir / Gamay and Pineau d'Aunis, Grolleau and Gamay rosé ... The 2019s are, as I write to you, still in fermentation ... 2020, we are waiting for the rain, like everyone else ... I work alone, most of the time, except for the few strokes of the fluff and of course for the harvest, which is done by hand, with a dozen people. I work the soil on the surface with a set of discs and a Canadian with vibrating teeth. I use nettle and horsetail herbal teas as well as orange peel essential oil The vinifs are made as much as possible with indigenous yeasts with less and less So2 (nothing from nothing on four of the last vinifs)
