The Domaine de la Chevalerie, which Laurie, Emmanuel & Stéphanie Caslot take care of today, is a long family story that began nearly 400 years ago. Located on the AOC Bourgueil hillside, the vineyard grown organically (end of 2008 certification) and biodynamically extends over different terroirs and localities, each giving wines with their own identity. It is with our feet in the ground that we cultivate our Cabernet Franc vines, vines aged 35 to 75 years on average. Our interventions are always moderate. We do not seek to interfere in the development of the plant; only to accompany and protect it by gently promoting biodiversity, life and the balance of the soil. When the harvest arrives, we wait for the correct maturity of the fruit and ensure careful sorting, after an entirely manual harvest in boxes. Le domaine de la Chevalerie dont prennent soin aujourd’hui Laurie, Emmanuel & Stéphanie Caslot est une longue histoire de famille débutée il y a près de 400 ans. Situé sur le coteau de l’AOC Bourgueil, le vignoble cultivé en bio (fin certification 2008) et biodynamie s’étend sur différents terroirs et lieux-dits donnant pour chacun des vins avec une identité propre.

C’est les pieds dans la terre que nous cultivons nos vignes de Cabernet Franc, des vignes âgées de 35 à 75 ans en moyenne. Nos interventions sont toujours modérées. Nous ne cherchons pas à interférer dans le développement de la plante ; seulement à l’accompagner et à la protéger en favorisant, en douceur, la biodiversité, la vie et l’équilibre des sols. Lorsqu’arrivent les vendanges, nous attendons une maturité juste du fruit assurons un tri attentif, après une récolte entièrement manuelle en caissettes. Par choix, le travail au chai est le moins interventionniste possible afin de favoriser l’identité propre de chaque lieu-dit, chaque cuvée…
