Originally from Burgundy, Stéphane Saillet has always been close to the vines until his studies in viticulture and his diploma in oenology. Trained in areas that share a sensitivity for the living like him (Domaine Viret, Zind-humbrecht, Tawse winery...) to then work as an oenologist for several years in the Chablis region within the Mauperthuis estate; he then decides to create his own entity.
The adventure of the “Maison Stéphane Saillet” begins in 2020 in Vertus in the Marne with the desire to produce wines from elsewhere by harvesting different grape varieties from various origins on their favorite terroirs (Burgundy, Alsace, Beaujolais, etc.) .
Cultivation practices respectful of the environment, manual harvesting, spontaneous fermentation without sulfites in oak or glass containers as well as the absence of filtration then allowing to obtain natural, fresh and digestible wines.
Also pursuing a long-standing hobby, Stéphane Saillet decided to create Brasserie 132, a micro-production of 100% organic, artisanal and original beers; all aged in 132-litre oak leaves and unfiltered. The idea is to obtain dry, light and finely aromatic beers.
