I Mattaioni is located in Gambassi Terme, a few km from San Gimignano. At the moment we have 3 hectares of white and red grapes, purely native. We work with as little human intervention as possible. In the vineyard we only use copper and sulfur in very small quantities. Let's practice green manure and let nature express itself as freely as possible. In the vineyard we only ferment the wine spontaneously, we don't filter, we don't clarify, we don't control the temperatures. We add very small quantities of sulfur dioxide only in the pre-bottling phase
