I decided to change my career in 2018 and after a specialization certificate in organic viticulture passed in Amboise, I landed in Villeneuve les Corbières in August 2019 to harvest. I fell in love with this country, and therefore settled there.
Since 2020, I have been working my 3.45 ha vines of Syrah, Carignan, Cinsault, Grenache noir and blanc, Macabeu, Muscat petits and gros grain alone. All my plots are over 30 years old. I only use sulfur and copper, no sexual confusion for grape worms, I prefer to nest bats... I plan to gradually replace my treatments with hydrosols and other fermented extracts, aiming locally .
Respect for biodiversity is essential in my work. I used an animal traction service provider for soil work in Syrah, but unfortunately it is not economically viable for my estate... so I bought a small tractor that I have to get to grips with . Not all of my vines can be mechanized, so I do everything on foot and on my back for the moment.
Obviously the harvesting and sorting of the grapes are exclusively manual. In the cellar, I am demanding on the quality of the grapes, on the processing of the wines and on hygiene. I work with a ratchet press, and vinify upstairs to do my racking by gravity, gently. Any manipulation is carefully considered and many, such as the addition of yeast or filtration (among others!), are banned.
The objective is to preserve what the grape knows how to transmit in pleasure and emotion. I have no oenological monitoring other than frequent laboratory analyses. The containers are mostly stainless steel tanks but also 5 oak barrels. My production in 2020 is 4000 bottles, and only 2500 planned this year.
