Domaine W is the culmination of Sophie and Dimitri's life project. Their desire is to create a RESILIENT AGRICULTURAL OASIS and prove that viticulture that truly respects the environment and people is possible!
In 8 years, Domaine W has planted 1000 trees and shrubs, 1ha of flowering meadows, 15 beehives, dozens of raptor posts, owl shelters, etc. The animal is also gradually regaining its place in this eco-system : a dozen sheep come as reinforcements to mow the inter-rows, the draft horses take care of the scavenging at the end of the season, around fifteen chickens have also taken up residence.
The family farm has been renovated while limiting its ecological footprint as much as possible. The installation of a myscanthus boiler allows Domaine W to be independent of fossil fuels for heating and hot water production with zero CO2 impact. 120 solar panels and 60,000l of rainwater reserves were also installed.
Domaine W produces Brut de Brabant, a sparkling wine using the traditional method which combines the 3 Champagne grape varieties (Chardonnay, Pinot noir, Meunier). Naturally certified Organic and Demeter , all the vintages benefit from aging in barrels and a long resting time on slats in the cellar. Three vintages are currently available: Blanc de Blancs, Rosé de Meunier and the Signature vintage (blend of 3 grape varieties).
The harvest is carried out by hand by members of the Domaine. The pressing is carried out as a whole bunch in a traditional vertical Champenois press from 1971.
Alcoholic and malo fermentations are carried out spontaneously. The addition of sulfite is limited to its strict minimum and the total SO2 of our vintages varies between 8 and 30mg/l.
Everything is done on site. Very popular and produced in confidential quantities , Brut de Brabant is reserved primarily for members of the “W Wine Club” as well as gastronomic partners .

En 8 ans, le Domaine W a implant&eacute; 1000 arbres et arbustes, 1ha des praires fleuries, 15 ruches, des dizaines piquets &agrave; rapaces, abris &agrave; chouettes,... L'animal reprend aussi petit &agrave; petit sa place dans cet &eacute;co-syst&egrave;me: une douzaine de moutons viennent en renfort pour tondre l'inter-rang, les chevaux de trait s'occupent du cavaillonage en fin de saison, une quizaine de poules ont &eacute;galement &eacute;lu domicile.
La ferme familiale a &eacute;t&eacute; r&eacute;nov&eacute;e en limitant au maximum son emprunte &eacute;cologique. L'installation d'une chaudi&egrave;re au myscanthus permet au Domaine W d'&ecirc;tre ind&eacute;pendant des &eacute;nergies fossiles pour le chauffage et la production d'eau chaude avec un impact CO2 nul. 120 panneaux solaires et 60.000l de r&eacute;serve d'eau de pluie ont &eacute;galement &eacute;t&eacute; implant&eacute;.
Le Domaine W produit le Brut de Brabant, un vin effervescent en m&eacute;thode traditionnelle qui associe les 3 c&eacute;pages champenois (Chardonnay, Pinot noir, Meunier). Naturellement certifi&eacute;es Bio et Demeter, toutes les cuv&eacute;es b&eacute;n&eacute;ficient d&rsquo;un &eacute;levage en barriques et d&rsquo;un long temps de repos sur lattes en cave. Trois cuv&eacute;es sont actuellement disponibles: la Blanc de Blancs, la Ros&eacute; de Meunier et la cuv&eacute;e Signature (assemblage des 3 c&eacute;pages).
Le vendanges sont r&eacute;alis&eacute;es &agrave; la main par les membres du Domaine. Le pressurage est r&eacute;alis&eacute; en grappe enti&egrave;re dans un pressoir traditionnel vertical Champenois de 1971.
