Noita Winery is Finland’s first urban winery based in the not-so-urban Fiskars Village. Fiskars is a small, creative community of only 600 permanent residents situated in the South of Finland, around one hours drive from Helsinki. Noita Winery sources hand-picked organic grapes from within the EU and transports them directly from the harvest to our winery in Fiskars. Grapes are harvested with our winemaker, Simon McCabe, and sent immediately in cold trucks. Once the grapes arrive, we give them as much respect as the organic growers do. With as low an intervention as possible, we sort, crush, macerate and press the grapes and allow them to spontaneously ferment with their own native yeasts. We use zero, or as little sulphur as possible and a full list of ingredients, process and grape origin is communicated on the bottle. Noita Winery will not fine or filter. Once we’ve finished with the lees and skins, we pass them to our friends at Fiskars Brewery to make some really special beers... and once they’re finished with them, piquette’s are distilled as ‘Grape Pomace Moonshine’. That means every grape arriving in our village is used three times!
