My name is Simon and I set up the Ex Materia estate with my father in 2020. We have been working on this project since 2018. The cellar is located in the heart of the village of Paziols in Aude and the vines are in the plain between Tuchan and Paziols as well as on the hillsides on Mount Tauch. We practice agriculture in compliance with the nature and progress charter and we work with native yeast. We put very few sulphites in our wines (see not at all). The vines are mechanized, but the harvest is done by hand.
