The Face B domain currently includes 8 hectares of vines in the municipality of Calce, cultivated in organic farming (certified) and according to the principles of biodynamics. All the work of the vine is done by hand (pruning, spring work, treatments with Bordeaux mixture and sulfur, herbal teas, infusions, 500P, harvest). Only the tillage and the last treatments are carried out mechanically. Our philosophy is to minimize the carbon footprint of our professional activity. The different grape varieties of the estate, white and gray grenaches (65 year old vines), macabeu (30 and 80 year old vines), muscat petit grains (50 year old vines), carignan, grenache noir (80 year old vines) as well as mourvedre (50 year old vines) are located on various soils such as shales, marly shales, or limestone marls. This wide variety of terroirs present in the town of Calce is atypical and quite unique. Until the 2019 vintage, the estate's production was supplemented by grapes organic (Grenache Noir, Syrah and Mourvèdre) purchased from a neighboring winegrower. It will now be carried out entirely on our vines. The work in the cellar is done with respect for each terroir. The grapes are vinified independently for each plot and in the most natural way possible, without oenological inputs, most of the time without adding sulfur, without filtration. For the whites, the pressing is direct, the alcoholic and malolactic fermentations are carried out in 228 liter barrels (9 years old) and the racking in stainless steel tanks takes place around a month before the setting. The rosé is the result of direct pressing followed by alcoholic and malolactic fermentation. At the end of fermentation, marcs are added. Then the wine is sown in half-muid of 600 liters (7 years old). The reds are vinified in concrete vats for 6 to 15 days, according to the mille-feuille method (one destemmed layer then a non-destemmed layer), from the infusion (whole bunches then direct pressing), see direct pressing. The aging is then carried out in half-muid of 600 liters (7 years old) and in alternating concrete vats. The estate produces around 15,000 bottles.
