Our philosophy can be summed up as follows: Produce without destroying the living and without harming man with the simplest and healthiest means. The objective is to make sincere and lively wines, pure grape juice without oenological make-up.
The vines are worked in organic farming, the grapes harvested by hand and spontaneous fermentations (indigenous yeasts). No oenological input or violent transformation until bottling. Very low doses of so2 can be added exceptionally if the wine has a low resistance to oxidation or the beginning of bacterial deviation, the objective remaining zero inputs. No filtration either.
About half of the wines vinified are made from grapes grown by us, the other half from purchased grapes. These grapes are systematically from organic farming, certified or not, and are also systematically harvested by us, at a maximum of 30 km from us and with always the same winegrowers (5 in total).
Our vines are certified organic by Certipaq.
We have passed all the cuvées in Vin de France since 2019, so we had to change the name of the estate to Calvez-Bobinet (formerly Domaine Bobinet), since the use of the Domaine name is confiscated from non-AOC vineyards.
