Their philosophy can be summed up as follows: to produce without destroying life and without harming humankind, using the simplest and healthiest methods. The goal is to make sincere and vibrant wines, pure grape juice without any oenological embellishment. Émeline treats the grapes in the cellar in the same way she treats the vines, with the utmost respect for life and without artifice, to create free wines bursting with energy.
The vines are cultivated organically, the grapes are harvested by hand, and fermentation is spontaneous ( using indigenous yeasts ). Approximately half of the wines produced are made from grapes grown on-site, the other half from purchased grapes. These purchased grapes are always organically grown, whether certified or not, and are also always harvested by the winemakers themselves, within a 30 km radius of the estate and always with the same five growers.
Zero input: No oenological inputs or violent transformations until bottling.
SO2: Very low doses of SO2 may be added exceptionally if the wine shows low resistance to oxidation or the beginning of bacterial deviation, the objective remaining zero input.
Filtration: No filtration is carried out.
Since 2019, all the wines have been classified as Vin de France . They therefore had to change the name of the estate to Calvez-Bobinet (formerly Domaine Bobinet), since the use of the name "Domaine" is prohibited for non-AOC vineyards.
