"ICARO is a small project to rediscover the Castelli Romani. We want to raise awareness of the grapes and wines of this volcanic land, brazenly suited to the vineyard and yet without a voice. We want to bring the Vino dei Castelli back to the people of Rome in the truest, simplest and most direct way possible. We don't want to do it alone, but by creating the most beautiful and powerful network of people, producers, wine bars and clubs willing to believe in this idea. And we want to have fun. Seriously." The grapes were purchased from third parties in 2022 and will instead come mostly from owned vineyards starting from 2023/2024. All wines are table wines. Depending on the vintage, small quantities of SO2 can be added always and only before bottling. The total sulfur dioxide is always well below 40mg/l for all wines.

Le vigne da cui provengono le uve sono certificate biologiche. 
Le uve sono state acquistate da terzi nel 2022  e saranno invece provenienti in maggior parte da vigneti di proprietà a partire dal 2023/2024.
Tutti i vini sono Vini da Tavola.
A seconda dell'annata, possono essere aggiunte piccole quantità di SO2 sempre e solo pre-imbottigliamento.
La solforosa totale è sempre ampiamente inferiore ai 40mg/l per tutti i vini.
