Cascina Gasparda is located in the heart of the Basso Monferrato, divided between the municipalities of Olivola and Frassinello Monferrato, it covers about 12 hectares of which 6 are planted with vineyards and 6 are divided between woods and perennial meadows. The soils vary from red to gray, to white and are all covered with grass and flowers: we try to keep the tillage to a minimum and to compact them as little as possible. Most of the work is done by hand, the rest mechanically. The company is fully certified organic and associated with Vinnatur. Over the years we have tried to reduce the use of copper and sulfur more and more by using non-chemical products and a couple of years ago we started working in biodynamics. The harvest is entirely manual. In the cellar everything is as it once was: tanks, pump, destemmer and press. Fermentations are spontaneous, without pied de cuve or temperature control, the wines are stabilized with static decantation for one or two winters (a depending on the type of wine), the sulphites are minimal and only if necessary.

Cascina Gasparda si trova nel cuore del Basso Monferrato, divisa tra i comuni di Olivola e Frassinello Monferrato, si estende su circa 12 ettari dei quali 6 coltivati a vigneto e 6 suddivisi tra boschi e prati perenni. I suoli variano dal rosso al grigio, al bianco e son tutti coperti da erba e fiori: si cerca di mantenere le lavorazioni al minimo e di compattarli il meno possibile.
La maggior parte dei lavori viene effettuata a mano, il resto meccanicamente.
L'azienda è interamente certificata biologica e associata a Vinnatur. Negli anni si è cercato di ridurre sempre di più l’uso di rame e zolfo utilizzando prodotti non chimici e da un paio d’anni si è iniziato a lavorare in biodinamica.
La vendemmia è interamente manuale.
In cantina è tutto come una volta: vasche, pompa, diraspatrice e torchio. Le fermentazioni sono spontanee, senza pied de cuve né controllo  di temperatura, i vini vengono stabilizzati con decantazione statica per uno o due inverni (a
seconda della tipologia di vino), le solfitazioni sono minime e solo se necessarie.
