Rémi Dufaitre and Laurence Liatard started buying vines in Brouilly and the surrounding vintages from 2006. With each bottling and depending on the vintage, Rémi can add between 0 and 2 mg / L of sulfur in order to stabilize the wine which he says requires it. From the start, he worked the soil organically and sold his grapes to the cooperative, but following the fermentation with indigenous yeasts. In 2010, he judged his work close enough to the wine he wanted to make and bottled his own vintages.
