We work with old vines and ancient autochthonous vines, many of which are grown only in the area of Castelvenere (which is one of the most vine-grown municipalities in Italy as well as being the most vine-grown in Campania..), rediscovered and recovered (e.g. Grieco, Cerreto , Agostinella, Camaiola, Piscialietto etc.). The land on which the vines are grown has a clayey, calcareous component mixed with gray tuff (volcanic soil), volcanic stones used in the past to build the cottage and the cellar. We do not use any synthetic chemical products, instead focusing our attention on restoring the natural fertility of the earth and respecting and enhancing ecosystems (protecting the life of an ecosystem means making the vines stronger and more alive) which allow the harvesting of healthy bunches without any type of chemical residue. The defense treatments of the vines are carried out (Phytotherapy) using vegetable essences (plants collected by us) such as nettle, horsetail, borage which are macerated and fermented, to then naturally treat the vines. We also use propolis crude taken directly from the hives of bees. These treatments safeguard and protect ecosystems and strengthen the natural defenses of plants. In the cellar the work is ancestral, ancient and artisanal. We use spontaneous yeasts that are naturally selected in a healthy vineyard, working with the skins and with the yeasts themselves during aging, without resorting to the use of chemical additives, correctives and brutal technologies and invasive . We also work without sulphites. The harvest takes place manually by bringing the grapes in boxes to the cellar. For the refinement, truncated conical barrels made with native woods of our areas are used, woods once used by the old farmers, such as Acacia, Chestnut and Cherry.
