I created my estate in Assignan (Hérault) in 2017 on a clay-limestone plateau at an altitude of 270 m. There are 4 hectares of vines divided into 7 plots, certified organic and unploughed, where I use liquid manure for the treatments. The grapes are harvested by hand. In the cellar, vinification is carried out with indigenous yeasts, without additives, without fining, without filtration, without added sulphites. I minimize my actions in the vineyard and the cellar to preserve Nature and limit energy expenditure.
