The Domaine de Cantalauze has 9 hectares of vines surrounded by woods, natural meadows, shale and organic crops, located on the Cordais plateau, a small limestone plateau backed by the Grésigne forest massif. Since 1982, we have been developing biodiversity, soil life and tailor-made vine management: we are experimenting with global and ecological organic agriculture. Cantalauze is also a human adventure with its winegrowers, its grape pickers who harvest with their own hands each vintage, its drinkers who meet there all year round.
The daily reflection and attention paid to the vine and its ecosystem make it possible to give birth, through spontaneous fermentation using only indigenous yeasts, to wines naturally rich in all the particularities of the terroir and the vintage. The diversity of grape varieties grown on the estate and the different winemaking and aging methods reflect the richness of Gaillac's heritage.
All year round we welcome you to our winery built on the limestone rock and with century-old walls of the same rock which offers a very pleasant freshness in the summer period.
We offer tours of our vines to explain how we cultivate them as well as the cellar which brings together the different winemaking workshops in one place: from receiving the harvest to the amphorae, including the vat room or the disgorging workshop.
