Mercedes and Pierre-André DELMAS have implanted the Mas DELMAS in Salses le Château then in Rivesaltes. The estate is currently 15 hectare of vines in organic farming. The 15 hectares and winemaking are labeled "biodynamic" for the 2017 harvest. It is on the last slope of the maritime Corbières in the Eastern Pyrenees (66) that the vines of Mas DELMAS bask in the sun. The southern exposure, little rain (alas) and a Tramontane almost permanent, are the guarantors of a healthy, natural agriculture and respectful of the environment and human beings. The clay-limestone soil gives the wines a minerality as well as a spicy side of the most seductive with the schistous subsoil. We want to guarantee and provide our customers with great wines with the authenticity and originality of its grape varieties and its soil while penalizing the planet as little as possible. Our supplies are all or partly from recycled products: - our packaging cartons of wine bottles are 90% recycled paper. - The printing inks of cartons and labels are of plant origin. - Our washing and disinfection products do not contain chlorine, are not from oil and are biodegradable. We harvest manually in 10Kg crates that are put in a cold room within half an hour after cutting. This has the result of blocking the aromas and not using sulphites on the harvest. The white and rosé wines are brewed at low temperature. Red wines make a pre-fermentation cold extraction of 3 to 5 days. Whenever possible, we only work with native yeasts and we do not stick the wines. The aging in barrels brings a subtlety, a fat, a roundness and a finesse worthy of the greatest wines. We perform a gentle filtration at the time of bottling.
