In 2020, Pepe Rodríguez de Vera, Hilarión Pedauyé, Álvaro Ruiz and Alberto Soriano, 4 friends from the professional world of wine, join their paths, driven by one goal. Faced with the impotence of seeing how traditional varieties, emblematic vineyards and unique production methods of the Valencian Community disappear to give way to the industry, the mistreatment of privileged terroirs and wines without soul, they decide among the 4 to develop a Levantine project with the mission of change that trend. Sopla Levante is born. The project possibly begins in one of the mythical places of the Valencian Community: La Mata Natural Park, Alicante province. A place that in ancient times had 250 hectares of which only 35 remain today. A magical place, with ancient vineyards standing just a few meters from the beach and the salt flats, which support extreme weather and salinity conditions that provide an incredible personality to the wines. At that moment we decidedly began to manage part of those vineyards that were being lost with our minds set on continuing to search for new locations that would allow us to express the wine-growing wealth that the Valencian Community has had, and that we want to value. Thus, one of the projects that Rodríguez de Vera was developing in Requena with old Bobal vineyards, is involved in this staging, and we quickly began to include new plots of Monastrell, Cariñena, Valenci Negre, etc., in this project in which We have never looked at profitability but rather in doing what we are passionate about. Sopla Levante was born with the aim of putting in value traditional varieties and emblematic vineyards that are disappearing, some of them are currently the only one in the world managing them, they are micro-vineyards of almost extinct varieties, such as the Gustico de Elche or the Valencí Negre . We work in collaboration with the University of Valencia to determine varieties that still do not even have a name, and in the determination and study of minority varieties that have never had a leading role that we understand can be interesting today, such as Esclafagerre, Parrell, Forcallat, Crujidera … And of course mythical vineyard plots that we have been acquiring of better-known varieties such as Bobal, Monastrell or Cariñena, in a pure commitment to expressing a terroir that we have fallen in love with. Our challenge at Sopla levante is to bring the simplicity of an unknown variety or a spectacularly unique terroir to the maximum expression. That is why our philosophy in this project is the development of microvinifications of very limited availability of each of our sites in a natural way, or failing that with minimal intervention. We do not add sulphites in our elaborations, and we use indigenous yeasts from within the vineyard itself, making a vat foot inside it that we later transfer to the winery to start the fermentation process of that plot. In our desire to innovate and get the maximum expressive value out of each wine, we decided to implement new techniques in some of our completely new wines such as aging on chips made with dead vines from that same vineyard, aging in barrels that have previously contained Cantueso liquor, amazed with subsequent pressing in winter at temperatures below zero ... All this also imbued with traditional elaborations and recovering old techniques of the area such as crianza biological and oxidative and rancidity processes in demijohns.
