The company

Vallisassoli is a winery located in San Martino Valle Caudina, a small town in the province of Avellino on the border with Benevento. The name of the company owes its origins to the historical vicissitudes of this area, the hill where the vineyard stands was, in fact, an ancient Saxon camp.

My adventure in the world of wine began in 2011 and arose from the desire to to continue the family tradition, that of "making wine at home", and to enhance the precious vineyard inherited.

Self-taught, I try to learn pruning techniques at the Simonit & Sirch, I frequent the Campana biodynamic association to learn the principles of this method to create a real Agricultural Organism to improve the land I cultivate.

The vineyard

The vineyard, a pergola planted by my father 35 years ago, is composed of three varieties of different grapes: Greco, Fiano and Coda di Volpe, and extends for approximately one hectare in a forest at the foot of Monte Partenio. The cultivation of the vineyard is marked by the philosophy of the biodynamic system; the company has, in fact, been Demeter certified since 2017, to guarantee high quality of grapes grown naturally, without the use of chemical products, with total respect for the soil to preserve its fertility.

Two new projects arrive in 2019:

• On Monte Taburno in the municipality of Sant'Agata dei Goti I planted one hectare of vineyard in Aglianico, a plateau at 500 meters above sea level on a former stone quarry.

• Taking care of and restoring the vineyard located inside the garden of the Lombard castle of the Pignatelli Della Leonessa family located in the municipality of San Martino Valle Caudina.

In the cellar

Winemaking occurs in the least invasive way possible, but nothing is left to chance: fermentation is regulated by spontaneous yeasts, no chemical intervention and filtration, few decantings, but only a lot of time to allow the wine to mature as best as possible.

<p class="p1">Vallisassoli &egrave; un&rsquo;azienda vinicola situata a San Martino Valle Caudina, un piccolo paese nella provincia di Avellino ai confini con Benevento.Il nome dell&rsquo;azienda deve le sue origini alle vicissitudini storiche di quest&rsquo;area, la collina dove sorge la vigna era, infatti, un antico accampamento Sassone.</p>
<p class="p1">La mia avventura nel mondo del vino nasce nel 2011 e scaturisce dalla volont&agrave; di continuare la tradizione di famiglia, quella di &ldquo;fare il vino in casa&rdquo;, e di valorizzare il prezioso vigneto ricevuto in eredit&agrave;.</p>
<p class="p1">Partito autodidatta, cerco di apprendere le tecniche della potatura presso la scuola Simonit &amp; Sirch, frequento l&rsquo;associazione biodinamica Campana per apprendere i principi di questo metodo per creare un vero e proprio Organismo Agricolo per migliorare la terra che coltivo.</p>
<h3 class="p1 pt-3">La vigna</h3>
<p class="p1">La vigna, una pergola piantata da mio padre 35 anni f&agrave;, &egrave; composta da tre variet&agrave; di uve differenti: Greco, Fiano e Coda di Volpe, e si estende per circa un ettaro in un bosco ai piedi del Monte Partenio. La coltivazione della vigna &egrave; scandita dalla filosofia del sistema biodinamico; l&rsquo;azienda &egrave;, infatti, certificata Demeter dal 2017, a garanzia di un&rsquo;elevata qualit&agrave; delle uve coltivate naturalmente, senza l&rsquo;utilizzo di prodotti chimici, nel totale rispetto del terreno per preservarne la fertilit&agrave;.</p>
<p class="p1">Nel 2019 arrivano due nuovi progetti:</p>
<p class="p1">&bull; Sul Monte Taburno nel comune di Sant&rsquo;Agata dei Goti ho piantato un ettaro di vigna ad aglianico, un altopiano a 500 mslm su un ex cava di pietra.</p>
<p class="p1">&bull; Prendermi cura e ripristinare la vigna che si trova all&rsquo;interno del giardino del castello longobardo della Famiglia Pignatelli Della Leonessa sito nel comune di San Martino Valle Caudina.</p>
<h3 class="p1 pt-3">In Cantina</h3>
<p class="p2">La vinificazione avviene nel modo meno invasivo possibile, ma nulla &egrave; lasciato al caso: la fermentazione &egrave; regolata da lieviti spontanei, nessun intervento chimico e filtrazione, pochi travasi, ma solo tanto tempo per far maturare al meglio il vino.</p>
