Vallisassoli is a winery located in San Martino Valle Caudina, a small town in the province of Avellino on the border with Benevento. The name of the company owes its origins to the historical vicissitudes of this area, the hill where the vineyard stands was, in fact, an ancient Saxon camp.
My adventure in the world of wine began in 2011 and arose from the desire to to continue the family tradition, that of "making wine at home", and to enhance the precious vineyard inherited.
Self-taught, I try to learn pruning techniques at the Simonit & Sirch, I frequent the Campana biodynamic association to learn the principles of this method to create a real Agricultural Organism to improve the land I cultivate.
The vineyard, a pergola planted by my father 35 years ago, is composed of three varieties of different grapes: Greco, Fiano and Coda di Volpe, and extends for approximately one hectare in a forest at the foot of Monte Partenio. The cultivation of the vineyard is marked by the philosophy of the biodynamic system; the company has, in fact, been Demeter certified since 2017, to guarantee high quality of grapes grown naturally, without the use of chemical products, with total respect for the soil to preserve its fertility.
Two new projects arrive in 2019:
• On Monte Taburno in the municipality of Sant'Agata dei Goti I planted one hectare of vineyard in Aglianico, a plateau at 500 meters above sea level on a former stone quarry.
• Taking care of and restoring the vineyard located inside the garden of the Lombard castle of the Pignatelli Della Leonessa family located in the municipality of San Martino Valle Caudina.
Winemaking occurs in the least invasive way possible, but nothing is left to chance: fermentation is regulated by spontaneous yeasts, no chemical intervention and filtration, few decantings, but only a lot of time to allow the wine to mature as best as possible.
