My name is Nicolò Grippaldi, I am 37 years old and I am a small biodynamic wine grower in Gagliano Castelferrato, a small village 651 meters above sea level in the province of Enna, Sicily. In 2015, in the abandoned lands of my great-grandfather, I planted 3.33 hectares, with approximately 13 thousand cuttings of Nero d'Avola and Nerello Mascalese. I do not manipulate the process of turning grapes into wine. I let the earth and the stars set the natural rhythm. The operations in the cellar are totally related to an astronomical lunar calendar and the analytical parameters of the must and grapes are not modified, grapes that must arrive perfectly healthy and with excellent analytical parameters of maturation (both cultivars are harvested all in one day). In the cellar, fermentation starts spontaneously for the entire mass, without any additions and without pied de cuve. I only use low doses of sulfur dioxide: 2g per hl.
