After training as an electronics engineer and starting his career at Airbus, Nicolas chose to rediscover his roots and carry out a project that has been driving him for a long time: living among the vines, listening to them and extracting a wine from them. who respects and expresses all their qualities. In 2018, he bought an old 19th century cellar and the adjoining Clos vines, in the Layon valley. The estate is a 10 hectare enclosure which was part of the Raimbaudières estate. It is one of the first gravity cellars in the region, built in 1895. The cellar, on three levels, is very large, but in poor condition. It has not hosted wine making for over twenty years. However, it is not uninhabited: the cellar is home to colonies of small and large horseshoe bats, and a large murine: so many precious allies in the fight against grape worms! The estate has been converted to organic since 2016. It already testifies, in its flora and fauna, of a preserved biodiversity. Natural grassing, superficial working of the soil, green manure: everything is done to maintain and increase the richness of the soil and the quality of the vine environment, and to produce the best grapes. The estate is planted with grape varieties from the region: Chenin, Grolleau, Cabernet Franc and Chardonnay. The vinification is carried out as simply as possible to preserve the purity of the juices, nothing is added and nothing is removed. No technological process is used, no filtration and no pump is used (except for washing the pipes). We use gravity to the maximum to stay in the spirit of the place.
