Le Grignolino Ottavio est l'un des fleurons du domaine, une réalité viticole qui a toujours été prédisposée à l'utilisation des procédures biologiques. Égrappage doux. Le liquide est laissé fermenter dans de grandes cuve en acier, après avoir été macéré sur ses peaux pendant environ une semaine. Le jus présente une couleur rouge rubis. L'odeur est délicate et assez caractéristique du cépage, une bonne sensation de raisins mûrs et des odeurs de sous-bois. Les arômes vont sur la griotte, framboise, la camomille, complétées par un fond épicé dans lequel se détachent les notes de cannelle et d'anis étoilé. Le goût est tannique et une bonne amertume, dans un équilibre entre l'acidité initiale et la saveur qui favorisera la consommation. Explosif et jouissif après un passage en carafe d'au moins 40 minutes. 💥💥💥

Every once in a while, just when you start to think you have tasted all of what natural wine has to offer, just when you think you’ve tasted the best, you find a gem of a bottle that sweeps you off your feet. This is that bottle. The colour is red current jelly. The first thing that hits your palate is a little fizz. Then cherries, blackberries, quickly followed by a lip-smacking tartness. The finish is complex, with a subtle hint of anise. Perfect at room temperature. Drink alone or with a juicy steak. DAMN😍
