After working for several years in Australia and saving money, Morgane Seuillot was able to buy some vines. In 2016 she vinified her first harvest and created Dandelion, a microscopic domain of a small hectare on the Hautes Côtes de Beaune. Unfortunately, the frost did not spare him and his first production did not exceed 600 bottles. In 2017, nature was kinder and Morgane was able to bottle 3,000 bottles. At the end of 2022, Christian joined Morgane on the estate, after having worked for many years as cellar master at Domaine Chandon de Briailles. From the start, Morgane wanted to work as close as possible to nature, without artifice, both in the vineyard and in the cellar. It is therefore with the greatest respect that she undertook the work of the soil, on horseback, without ever using synthetic products of course. On its cold soils, the harvest is late, even very late. It was in October that she decided to pick up her precious bunches in order to obtain good ripeness. The wines are worked in whole bunches, with a fermentation of about twenty days, passage under the old wooden press and aging in old rooms. In complete consistency with its principles in the vineyard, Morgane does not use sulfur and can therefore proudly display the term "nature" on its labels, which are as discreet as they are poetic.
