Founded in 1960 on the initiative of Patrice Michon, Domaine Saint Nicolas is a vineyard of around forty hectares which extends between Brem-sur-Mer and L'Ile d'Olonne. On clay-schist and quartz soils, it is bordered by the ocean, the forest, the marshes, thus benefiting from an exceptional terroir and microclimate. All highlighted by biodynamic viticulture adopted in 1995 and the polyculture present on the estate. For three generations, the Michon family has worked to revive and promote Brem wines. In the 80s, Patrice was joined by his sons Thierry and Eric; Thierry introduced Biodynamics with the double organic and Biodyvin certification in 1993 then Demeter in 1995. In 2011, with the creation of the AOC, the Domaine was placed under the aegis of the “Fiefs Vendéens Brem” appellation. Today, Thierry works with his two sons, Antoine and Mickaël.
In the Vine The work of supporting and fortifying the vine is the most natural there is. The only amendment made is of organic origin: the composting of manure. Furthermore, in accordance with the principles of Biodynamics, preparations, herbal teas (nettle, horsetail in particular) are provided for the life of the soil and plants. The soil is worked on the surface so as not to destroy its structure and the harvest is obviously done manually. In the Chai In the cellar, room is made for the expression of nature. No addition. The wine evolves and reveals unique characters: the balance and typicality of the terroir. A lot of vigilance is taken when monitoring fermentations and subsequent stages. The wines of Domaine Saint Nicolas are the expression of the Earth. And as such, that of complexity, minerality and elegance. At the Domaine From now on, visits, tastings and tailor-made events are accessible to all in the new Chai Les Clous nestled in the heart of the vines. From Tuesday to Saturday, you can discover the history of the vineyard and taste directly on site. The possibility is offered to you, upon reservation, to organize tailor-made events in the “trigone” room specially reserved for private parties, cocktails, etc. The Domaine also offers activities dedicated to business tourism and corporate events.
Selected by the greatest restaurants in France and abroad, the wines of Domaine Saint Nicolas are highly qualitative, reflecting a unique terroir and an exceptional microclimate; all in biodynamic agriculture that respects balance. The vineyard offers white, rosé and red wines from the Pinot Noir, Négrette, Chenin and Chardonnay grape varieties. The first vintages are distinguished by fruity and refreshing characters that can be consumed young. Particularly renowned are the vintages with greater complexity and elegance. Recently, wines using traditional methods have also been produced, as well as atypical amphorae. “It is in the vineyard that wine is made. In Biodynamics, what is interesting is that we quickly realize that we are producing unique wines. » Thierry Michon
