Matthieu and I are two converts: one was a commercial director in Bordeaux, the other a lawyer in Paris. A (big) common point, an unlimited passion for wine and blind tastings. After a long journey, we made the decision to quit our old trades and take the direction of the Terrasses du Larzac to try to make our own wine there. At the beginning of 2018, we have the opportunity to take over 4.5 hectares of vines, already certified AB, in the communes of Arboras and Saint Saturnin de Lucian, attractive terroirs on clay-limestone soils in the heart of the appellation. We now have 9 hectares, all worked organically (the plots acquired since then are in the process of being certified). We are beginning to touch on biodynamics, in particular through the use of herbal teas to limit the number of treatments. Work with a tractor (little plowing, a lot of mowing because we are looking for controlled grassing) but also with a horse on the vines that are too narrow to be mechanized (old Carignan and Cinsault over 60 years old). The harvest is manual, in 12 kg crates in order to preserve the grapes as much as possible from crushing phenomena. In the cellar, the fermentations are spontaneous. Monitoring of the lunar calendar for everything related to racking and bottling operations. Aged in vats or in barrels according to the desired wine profile. The wines do not undergo filtration during bottling. The only input used is SO2, at homeopathic doses. Some cuvées are made without any addition of sulphite when the profile of the wine lends itself to it. The general objective is to add as little as possible without harming the straightforwardness of the wine.
