Chateau Coupe-Roses (AOP Minervois) is a family estate (since 1600). It was our mother's domain, before grandmother and even before great grandmother. A story of women (many) and men (too). Today we work my brother and I together. We have 40ha of vines, everything is worked according to a holistic approach, that is to say that we try to play on a set of factors to make the vines as independent and healthy as possible. Because for us a good wine comes from a good grape, the vine must be healthy and well integrated into its environment. This means concretely that we work in biodynamics (Demeter), we do agroforestry, soft carvings and we replant old native grape varieties resistant to drought because we do not wish to irrigate. All our harvests are manual. We are located in La Caunette, a village in the heights of the Minervois between 200 and 400 m above sea level on a Karstic plateau (limestone cliffs in which water has dug cavities). Between the altitude, the biodynamic work and the basements with caves, our wines have a very nice freshness. We make 4 white wines and one orange wine. It's rare in Minervois where whites represent only 3% of the AOP, and we have 7 red wines and a rosé wine.

Le Chateau Coupe-Roses (AOP Minervois) est un domaine familial (depuis 1600). C'était le domaine de notre mère, avant grand-mère et encore avant arrière grand-mère. Une histoire de femme (beaucoup) et d'hommes (aussi). Aujourd’hui nous travaillons mon frère et moi ensemble.

Nous avons 40ha de vigne, tout est travaillé selon une approche holistique c'est à dire que nous essayons de jouer sur un ensemble de facteurs pour rendre la vigne la plus autonome et saine possible. Car pour nous un bon vin vient d'un bon raisin, la vigne doit être saine et bien intégrée dans son environnement. Cela veut dire concrètement que nous travaillons en biodynamie (Demeter), nous faisons de l'agroforesterie, des tailles douces et nous replantons de vieux cépages autochtones résistants à la sécheresse car nous ne souhaitons pas irriguer. Toutes nos vendanges sont manuelles.
Nous sommes situés à La Caunette, un village des hauteurs du Minervois entre 200 et 400 m d'altitude sur un plateau Karstique (falaises de calcaire dans lequel l'eau a creusé des cavités). Entre l'altitude, le travail en biodynamie et les sous sols avec des grottes nos vins ont une très belles fraicheurs. Nous faisons 4 vins blancs et un vin orange. C'est rare en Minervois où les blancs ne représentent que 3% de l'AOP, et nous avons 7 vins rouges et un vin rosé.
