Cantina Ortaccio is located in Latera, in the province of Viterbo, a stone's throw from Lake Bolsena.
Our vineyards, some of which are ungrafted, are located between Gradoli and Latera, in a territory of volcanic origin located between 400 and 550 m above sea level, partly in the volcanic caldera of Latera and partly on the slopes of Lake Bolsena.
The vines are those of the area's tradition: Trebbiano, Procanico and Moscato for the Bianco and Sangiovese, Greghetto, Aleatico and a little Ciliegiolo for the Rosso.
We grow our grapes without the use of synthetic products.
The soil between the rows is chopped to cut the spontaneous grass. Around the vines are hoed by hand. A carpet of poppies, chamomile, St. John's wort, nettle and chicory manifests itself every year to announce spring, manifesting the richness of this living soil.
There are no systemic treatments of any kind.
We only use sulfur and copper, atomized at a very low concentration.
The vineyard is peeled by hand to let the air flow among the leaves.
In the cellar, the grapes harvested during the day, are de-stemmed by hand and pressed with their feet in the vats and started to ferment in fiberglass containers with only indigenous yeasts and without adding sulfur.
The aging is done in regenerated oak barrels, for at least 10 months, in our traditional cellar dug directly into the tuff, which guarantees humidity and a constant temperature of 12 °. No decanting is done.
After maturation, the wine is aged in the bottle for at least 3 months before being marketed.
