We are proud to be farmers and to work the land to share our wine. Our choice is to have a peasant farm for an artisanal product; a domain with human scale to cultivate with respect for nature and the product.
A good wine is made at; the vineyard and it is at; the earth stuck to the surface his boots that we recognize a good winemaker. This work the vine allows us to make wine with the minimum of intervention and native yeasts for the clearest possible wines, reflecting their terroirs. Single-ingredient wines! It is therefore humbly but passionately and in the most natural way possible that, from the vine to the vine; the bottle, we do our best to express the potential of Savoyard terroirs and grape varieties.
We cultivate more than 5.5ha on clay-limestone hillsides (slope from 15 to 45%), facing south-east, worked in organic farming. Work begins in « biodynamic » is at; our sense a long journey to; do it by observing and learning from your land.
To make wine, you just have to collect the fruits of your labor. Depending on this, it will be as simple as possible with very little intervention and without additions to get the most out of the grapes and native yeasts. Offering you well-bred wines is the result of a work of patience but also humility. The barrels are chosen carefully; the passing of the wines must soothe them and not mark them. We therefore favor beautiful wood origins and barrels of several wines. Furthermore, their shape and volume have a beneficial effect on the behavior of the lees and the evolution of the wines in natural vinification. Amphorae and jars in terracotta and stoneware allow the oxygenation of the wine without adding wood tannins. Passing through this container, the wine returns there; where he was born in clay.
The rare manipulations on the wine are scheduled according to the principles of biodynamics and according to the lunar calendar in order to preserve its purity. original. We do not want to disguise our wines by making them what they can never be. As a winemaker the idea is to understand our terroirs in order to adapt our choices according to them. Although we want a wine without artifice, we do not want deviations or defects that standardize tastes from below. Our wish is that our wine reflects our passion and our respect for our terroirs and our indigenous grape varieties. Wines that are as honest as possible, reflections of their terroirs, their vintage and the mood of the winegrowers (and their acolytes).
