Domaine La Réserve d'O, created in 2004 by Marie and Frédéric Chauffray, is located in the town of Arboras, in one of the highest and coolest sectors of the Terrasses du Larzac appellation area. . Passionate winegrowers, they cultivate a biodynamic vineyard. Like viticulture, winemaking is intended to be very close to natural cycles, that is to say little interventionist. The idea of giving the name of their house La Réserve d'O to the Domaine comes from the desire to create a nature reserve where we can produce grapes in a rich ecosystem, both in terms of fauna and flora. . The objective is to work in a preserved environment, to optimize the balance of the soil, to create biodiversity, to allow the terroirs to express themselves fully in the wines. This is the essence of the profession of winegrower. THE VINEYARD The vineyard is located at an altitude of 400 m on the foothills of the Larzac Plateau, just under the Col du Vent, and overlooks the Hérault Valley. The 14 ha take root in a clay-limestone soil on a bed of stony chips and are swept daily by the north winds. WINES With very marked day / night temperature ranges in summer, the grapes ripen slowly and give our wines elegance and great aromatic complexity. The wines were very quickly distinguished by their greed and their original character and also by their own very "terroir" identity: signature of our Appellation "Terrasses du Larzac".

Le Domaine La Réserve d’O, créé en 2004 par Marie et Frédéric Chauffray, est situé sur la commune d'Arboras, dans l'un des secteurs les plus hauts et les plus frais de l’aire d’appellation des Terrasses du Larzac.
Vignerons passionnés, ils cultivent un vignoble en Biodynamie.  Comme la viticulture, la vinification se veut très proche des cycles naturels, soit peu interventionniste.
L'idée de donner le nom de leur maison La Réserve d'O au Domaine vient de l'envie de créer une réserve naturelle où l'on puisse produire du raisin dans un écosystème riche, tant au niveau de la faune que de la flore.
L'objectif est de travailler dans un environnement préservé, optimiser l'équilibre des sols, créer de la biodiversité, permettre aux terroirs de s'exprimer pleinement dans les vins.
C'est l'essence du métier de vigneron.

LE VIGNOBLE

Le vignoble est situé à 400 m d'altitude sur les contreforts du Plateau du Larzac, juste sous le Col du Vent, et surplombe la Vallée de l'Hérault.

Les 14 ha prennent racine dans un terroir argilo-calcaire sur un lit d’éclats pierreux et sont balayés quotidiennement par les vents du Nord.

LES VINS

Avec des amplitudes thermiques jour/nuit très marquées en été, la maturation des raisins se fait lentement et confère à nos vins de l'élégance et une grande complexité aromatique.

Les vins se sont très vite singularisés par leur gourmandise et leur caractère original et aussi par une identité propre très "terroir" : signature de notre Appellation "Terrasses du Larzac".
