Chan Chan is the fruit of a passion of a group of friends for living wines and old vines of Mediterranean grape varieties. In 2022, we are buying a 1 hectare plot, surrounded by scrubland and trees, old Cinsault and Lledoner Pelut on the heights of the Têt valley, at a place called Roupidères plateau (altitude 500 m +) between Montalba le Chateau and Tarerach in Conflent (Oriental Pyrenees).
The field has started from the beginning. a conversion to organic farming (certification in 2025), but we want to go much further in our practices; the vine: soil conservation agriculture, gentle pruning, biodynamic practices etc... All work is carried out in-house. by hand: pruning, budding, treatments, clearing of brush, harvest in 8kg boxes, strict sorting at once. the vineyard and the cellar.
In the cellar, our fermentations start naturally, thanks to the native yeasts present in the cellar. Vattings are short and extractions light (infusion). We want to maintain a lot of freshness in our wines and fruit, so our wines are aged in stainless steel vats for at least 6 months or in inert containers (barrels of several wines, egg in gré) for 6 months additional. Regarding S02, we add 2 grams/hl before mixing to reduce the risks of microbiological deviation and/or oxidation.
