Château Pech-Latt is a pioneer of organic farming: initiated in the 1970s, the vineyard has been certified organic since 1991. Château Pech-Latt is a 140 hectare vineyard, in the heart of the Corbières, surrounded by a setting of scrubland of over 400 hectares. The preservation of the ecosystem and biodiversity is our driving force: to have living soils, balanced vines, with respect for nature. In this preserved and living environment, we respect living beings from the smallest to the largest: We gently work our soils to develop microbial life, we have installed a shepherd with his 400 sheep on pasture in our scrubland and a beekeeper. occupies many beehives on the estate. We are also fortunate to welcome several protected species, such as owls and some bats (Greater Horseshoe Bat and Eurasian Murins). Our wines are the expression of this natural balance. In the vineyard, we only use manual or mechanical methods. We systematically favor gentle methods: mating confusion, prophylaxis and bio-controls. The unique ecosystem of Pech-Latt, a symbiosis created by the freshness provided by the surrounding Alaric mountain and the Château's biological diversity, allows the grapes to reach perfect maturity. The harvest is carried out by hand, to ensure gentle handling of the grapes and sorting directly in the vineyard. The grapes are sorted on arrival at the cellar before being 100% destemmed. The maceration in traditional vats lasts about twenty days. We use traditional cement tanks which allow a homogeneous maceration, and therefore a gentle extraction of polyphenols and soft, round tannins. During fermentation, we perform one or two shedding if necessary depending on the tasting. The wine is then gently pressed in a pneumatic press. After natural malolactic fermentation, the wine is aged for a few months in a traditional tank before filtration and bottling. No addition of sulphite is therefore made throughout the life of the wine.
