Les Chais du Port de la Lune is the first urban winery for winemaking and aging in France. pressing grapes in Bordeaux for a long time and a few years.
We are two long-time friends; carry out this project. Laurent Bordes the artisan winemaker and Annica Haapa the Finnish manager. After having placed the our barrels and our vats in a former blockhouse from the Second World War in the Bacalan district, we worked with them. à bring together a troop of healthy and passionate winegrowers.
Indeed, who says urban winemaking, also says no vines on site. This is why we wanted to collaborate with people who would be able to create real human sharing around this fruit, the GRAPE. We want to bring with us people who are progressing in their own right and who are not able to put all of their production into the bottle.
We are therefore a merchant but also a farmer because we harvest and transport each grape ourselves hand in hand with these wine growers who cherish their fruit. Our vintages can be labeled Organic, in conversion or without anything because one of the grapes is in the first year of conversion. And yes, we support our winegrowers from the start to prove to them that they made the right choice to begin their conversion!
For the vinification part, nothing too special because we respect the grapes of each origin so that they release their balance as their terroir has decided. every year. We do not over-extract despite this. my size 44 which I use for do some punching down. Native yeasts work slowly in our vats for the reds and in a few old barrels for the whites. We touch the juices as little as possible, which clarify on their lees, which allows us to avoid sticking or filtering before bottling. Our blends are driven by the desire to surprise with new balances resulting from the meeting of different terroirs from all over France. We do not want to create single varietals, despite this. the pleasure they can bring. It seems respectful to us to avoid a comparison with our partner winegrowers who also make their own wines which deserve to be discovered without preconceptions.
Each year we only create small vintages from 2000 to 2000. 5000 bottles so as not to slow down our pleasure of creation.
