For us wine is a pretext. The adventure began 4 years ago with the idea of saving a vineyard on two shaly hills on the borders of Corbières. Abandoned for 6 years exposed south they had suffered a lot. So we learned on the job two to carve clear and restore this vineyard. Given the amount of work no winegrowers wanted to recover and we are in the course of history become winemakers. These vineyards of 8 hectares were cleared by hand: pickaxe !! We have organized big collective projects and today we can say that 50% will leave again. Our first vintage Ecume des schistes took place in 2017. We produced 1112 bottles on 8 hectares after two years of hard work to tell you that we speak of nectar. Our first goal is to find a human relationship that is coherent and respectful. That's why we do not touch the ground. We practice biodynamics and pulverize the soil by hand with horn dung in the spring. We do not roast our vines during periods of nesting and breeding of animals and insects. We do not use any insecticide. The majority of our work is done by hand since we still do not have a tractor. The only treatments (between 0 and 4) are made with sulfur and copper exceptionally. Next year all vines will be sown in green manures and grazed by a herd of 6 donkeys. We practice fresh grapes and we train each year to improve this practice. technical. We do not limit the vigor of the vines by trimming because our vines are self-limiting for the moment. We recover as the vineyards in good condition, so we increased the vineyard of 2 hectares that we drive in the same way. We use a little organic fertilizer on the vines that lack vigor based on BOCHEVO. We hope in 2019 to produce 8000 bottles of productions. The grapes are picked in boxes. Scrape at the manual stripper. The press is manual ratchet. The punching is done at the foot and a very small pump allows us to pumping if necessary. The wines are neither filtered nor glued. On 2017 no sulphite was added. On 2018 Sulphites were added to one of our cuvées where the bird began to grow (The courage of the birds). We sometimes help the musts with natural nitrogen so that the indigenous yeasts reach the end of the fermentations. The bottling is done by gravity, the labeling is manual as well as all the rest of the process: corking labeling (Nantes) put in cartons.
