Passionate about Grenache, we got involved in 2010 in the expression of this grape variety ancestral to the Catalan landscape. In search of balance, our gaze turned to the land of Aspres, degraded brown schist soils, close to the Spanish border. The surface is limited to 3.50ha. It allows a manual, attentive approach, aiming at a viable, responsible, peasant economic balance. Tired of a standardization of taste, we are looking for an authentic and unique expression. Too often doomed to uprooting for lack of profitability, we engage in the acrobatic exercise of giving back to this vineyard inherited from our elders, its recognition among a sensitive public. The vine, driven without weedkillers, balances each year without excess of vigor, without stress, its deep roots allow it to see the future now with a certain serenity. Admittedly the production is not very generous but the concentration of the wines testifies to a juice delicately extracted with this vineyard worked essentially in a manual way. We limit the tractor passages to the bare minimum to avoid soil compaction, refuse the use of exogenous fertilizers, actively seek a balance by plant cover. Weeding is done mainly by hand. We use some preparations, infusions and essential oils to help strengthen the plant's natural defenses. The harvest is certainly entirely manual in small boxes to preserve the quality of the grapes and the soil. . For the sake of ethics and authenticity we do not want to use inputs even if we consider some of them to be harmless. We therefore favor indigenous yeasts and consider useless stabilization products. Sulfur is used in a very moderate way allowing us to deliver wines with very low doses of residual sulfur, see below the detection threshold 10 mg / l. Our wines are therefore likely to contain some sulfites, the quantities of which are variable but clearly displayed on our invoices. We take the advantage of bottling wines without filtration, their visual brilliance depending on their natural decantation during aging. A 1 year aging in bottle before marketing aims to push forward the concept of minerality, salinity and forget the exuberance of Grenache. Temperature, atmospheric pressure, lunar cycles are just some of the things everyone can enjoy when they open the bottle. The product is certainly alive. Production is confidential and limited to plots capable of responding to our very personal idea of Grenache.
