Our vineyard: Our estate is located on the slopes of the Cévennes Ardéchoise, in the south of the department. After having worked 10 years cultivating my olive trees and producing olive oil, I am taking over in 2020, (in addition to the olive trees) the family vines to vinify my first vintages. Our vineyard is made up of Gamay, Merlot and the native grape of our territory, Chatus. The vines are old, well-rooted and robust, with an average age of 30 years: that's what it takes for the terroir to begin to express itself in the wines! Work in the vineyard: We believe that wine is first made in the vineyard. During the year, seasonal work is carried out in such a way as to obtain grapes of maximum quality. We strive to produce the healthiest possible grapes, and this in certified organic farming. The harvest is of course done by hand. The vinifications: Whole bunch cuvée, long or shorter vatting, aging in barrels or not. Each grape variety is accompanied in a different way so that it can express its personality. We want our vinification to be as less interventionist as possible. Adjustment of SO2 at the end of fermentation or at bottling if necessary. The efforts of the year are rewarded by the joy of offering wines from an agriculture that preserves the environment and a gentle vinification that reflects the identity of our estate and our cuvées.
