The domain Founded in 1584, the cellars of the Fischbach house have seen more than 15 generations of peasant winegrowers. Located in Traenheim, in the vineyards of Strasbourg, the marly soils have made the reputation of the small wine-growing town. Relaunched by Jean Dreyfuss in 2017 with 3Ha of land, the estate now has just over 8Ha. Respect for nature and the living, the work of the terroirs is today preponderant at the estate. Winemaking Out of respect for the grapes and the work carried out throughout the year, the harvest is done exclusively by hand; the grapes must be healthy and not crushed. For the fermentations we favor the living naturally present on the grapes, we only use indigenous yeasts. The pressings are done gently and slowly. Our wines are vinified in the most natural way, it is fermented grape juice without additives, without filtration, without chaptalization or other manipulation that denatures the primary product. We produce different cuvées from direct pressing or blending, single grape varieties or macerations, depending on the terroir and the vintage. For this we use different containers according to the needs of the wines: stainless steel tanks, barrels and sandstone amphoras. The estate is part of this minimalist philosophy to bring wines with more purity, balance and drinkability.
