Our vision is to make the purest wine possible. That means nothing is added at any point during the winemaking process. Also we’re not using any new oak to change the original flavour of the wines In the vineyard we are always looking for ways of reducing our sulphur and copper output, working with biodynamic preparations and teas as well as microbes. Next year we will start installing sheep in part of our vineyards for weed control and fertilizer. The ultimate goal is to work without any machines for our natural wines and with the least amount of spraying that is possible, that’s why we’re planting mainly new hybrid grape varieties that are resistant against the main fungus infected deseases.
