After years of frustration and the desire to become a winegrower, the chances of existence brought us to the clay-limestone paths of Calce. Domaine Cau Eden started with plots of vines doomed to oblivion, and a Marmonier press from 1905 refurbished for the 2011 harvest. Vinification is done in stainless steel vats, which must be kept scrupulously clean, which allows us to use very little sulphites, mainly just before bottling. The plots of vines are scattered throughout the municipality of Calce, the land of the Tramontana which blows mercilessly. Most of the old vines were waiting for the grubbing-up premium to be renewed. Thanks to the help of neighboring winegrowers and donations of equipment, the family was able to move the estate forward! A way of working that expresses a certain tradition, expression of the terroir and idea of wine! Our three children run and play in our vineyards: no pesticides or synthetic weedkillers are used, nothing that could make them sick or harm nature. Not to mention the wine drinkers and our dog Freddy! To be a winemaker? It's quite simply the most complete and beautiful of professions for me. It's sometimes hard and physically demanding, but we never stop learning and meeting wonderful people. Working in an exceptional nature in Calce between sea and mountains, making the wines we want to drink is a privilege for me....

Après des années de frustration et l'envie de devenir vigneron, les hasards de l'existence nous ont amenés sur les sentiers argilo-calcaires de Calce. Le Domaine Cau Eden a démarré avec des parcelles de vignes vouées à l'oubli, et un pressoir Marmonier de 1905 refait à neuf pour les vendanges de 2011. Les vinifications se font en cuves inox, qu'on se doit de garder scrupuleusement propres, ce qui nous permet d'utiliser très peu de sulfites principalement juste avant la mise.

Les parcelles de vignes sont éparpillées à travers la commune de Calce, le pays de la Tramontane qui souffle sans pitié. La plupart des vieilles vignes attendaient la prime à l'arrachage pour être renouvelée. Grâce à l'aide de voisins vignerons, de donations de matériels, la famille a pu faire avancer le domaine ! Une manière de travailler qui exprime une certaine tradition, expression du terroir et idée du vin !

Nos trois enfants courent et jouent dans nos vignes : aucun pesticide ou désherbant de synthèse ne sont utilisés, rien qui pourrait les rendre malades ou nuire à la nature. Sans parler des buveurs de vin et de notre chien Freddy !

Être vigneron ? C'est tout simplement le plus complet et beau des métiers pour moi. C'est parfois dur et physiquement éprouvant mais on n'a jamais fini d'apprendre, et de rencontrer des gens merveilleux. Travailler dans une nature exceptionnelle à Calce entre mer et montagne, à faire les vins qu'on veut boire est un privilège pour moi ....
