Isabelle Jolly & Jean-Luc Chossart settled in Roussillon in 2005 in the heart of the Agly valley.
Their interest in the wines of yesteryear invites them to produce artisanal wines inspired by ancestral methods.
Today, the muscat of Rivesaltes lives in old barrels, the amber Rivesaltes is buried in demi-muids, the dry rancio stays in demijohns, the sparkling wines remain on their crowned heads in wooden racks, the dry wines are available in red, white and rosé…
Their wines made from AB certified grapes come from an island of 7 hectares of vines whose soil composed of schistous marl is grown without weedkillers, pesticides, chemical fertilizers or insecticides.
The harvest is manual and the grapes picked - grenache noir, syrah, carignan, macabeu, muscat - are selected and then placed in 9kg boxes.
During vinification, only the native yeasts of the grape are used and the remaining carbon dioxide released from fermentation is kept as a bulwark against oxidation during bottling.
The wine is neither fined, nor filtered, nor sulphited.
From the vineyard to the cellar, the work is organized by respecting the phases of the lunar calendar.
Their cuvées are vinified naturally without adding inputs or sulphite.
