*The domain has ceased its activity* In 1990, Claude and Iris Rutz-Rudel cleared 2 ha of holm oak on the hill behind their farm, to update the superb landscape of terraces with its dry stone walls. On these south-south-west facing slopes and on these "ridges" often no more than 5 m wide, they planted the grape varieties of the wines they love: Pinot Noir on the limestone soil at the top of the hill, the former "Clos du Curé" in Olargues. Cabernet Sauvignon, Cabernet Franc, Cot in the predominantly limestone terraces that rise behind the house: "Les Echelles de Lisson". Mourvèdre, Merlot and Petit Verdot are found in the schistous parts behind the house and on a plot in the shape of an arena wonderfully sheltered in the tenement of the Serre de Fenouillède: the "Clos des Cèdres". The management methods are varied, chosen according to the location and the habit of the grape variety: goblets in plantation and classic density (4400 vines/ha) for the Mourvèdre, goblets at high density (7000 vines/ha) on échalas for the Pinots and cord royat for the Cabernets (8000 p/ha) in the narrow terraces. Yields are deliberately limited by severe pruning in winter and a second green pruning in July. The vines are plowed and cared for according to the criteria of an agriculture that respects the natural balance of the soil and plants without synthetic pesticides and herbicides. The grapes are picked by hand at full maturity in 12 kg boxes, fermented in small stainless steel vats without artificial yeasts and pressed on a vertical press. The macerations are long, with daily pigeages. Depending on the year, follows aging in vats or in barrels for several months. The tastings decide the time of bottling, which can vary between 12 and 24 months. The wines obtained in this way are aged for long aging. To drink them in their youth, it is advisable to decant them a few hours before consumption.
