Domaine Chaud Cultivation , Domaine Chaud aims to grow as naturally as possible. In the first field, the number of pesticide sprays was reduced to zero in the first year, three times in the second year, and four times in the third year, and the amount of pesticide sprayed was reduced to the limit. In addition, we do not include large machines to keep the soil soft. All work is done manually. Of course, we don't use herbicides. We believe that a variety of grasses will grow in healthy soil, a wide variety of insects will grow, and a wide variety of microorganisms will grow in large quantities. We aim to enrich the ecosystem of the environment of the fields surrounding the grapes and to make wine that is packed with all the vitality of nature. Currently, Domaine Chaud has two vineyards. We will add new fields this year and next year. In April 2013, we plan to plant Pinot Noir in a third field on a small hill. It is a well-ventilated and sunny field. In this way, we plan to steadily increase the number of fields. The members of Domaine Shoo's wine club "Ko-Labo" are helping to plant and harvest seedlings. I am thinking that you can feel the wine closer by touching the soil and plants. Domaine Chaud way of thinking about brewing  The important thing in winemaking is to "brew naturally". We consider the individuality of the grapes first, leave it to the flow as it is, and brew it with a stance of watching the progress until it becomes wine. We do not make an effort to put it in the frame of wanting to make such a wine, but we make it to help you to become a grape. One thing I'm careful about as a way to help is that I don't mess with wine too much. I think that the only thing I can do is manage "temperature" and "oxygen". However, I think that the control of "temperature" and "oxygen" is the most important and difficult thing in wine making. I am struggling and studying this management every day. We make wine with the belief that "naturally made wine is gently soaked and full of fresh taste."
