Physiological size; spontaneous, permanent and selected grassing; manual harvesting and sorting; sulphur, copper and PNPP treatments at reduced doses with a knapsack sprayer. Everything by hand. Reconstruction of hedges. Spontaneous fermentations, thermal regulations, gentle extractions, only sulphites are used…if necessary, depending on the vintage.
