I'm 34 years old and I've been making wine for 7 years: first I made wine with the C.UV.E collective in New York. Marseille.
In 2020 I am moving to an area where there are no more - almost no more - vines: between Le Vigan and Mont Aigoual, in the Cévennes massif. I set up as a winegrower, harvesting, with a very small plot of vines (0.8ha) planted 30 years ago. There have been several agricultural and peasant histories here, and the forests which mainly make up the landscape are in reality large agricultural wastelands, which included some beautiful wine properties, not to mention "family" wines.Wine production completely stopped here in the 1970s, and all the vines uprooted.
I have been carrying out an investigation into the history and viticultural uses of these terraced plots, and for the past two years I have started to explore them. "re-plant" vines there where I can... I try to imagine what this terroir would have to offer. offer as wine and with what grape varieties. As the climate changes, as social and economic rules and realities change, the challenge is to prove that there can be wine and "good" wine.
This involves a “nature” and “biological” approach: it is no longer really a subject but an obvious fact. A work as close as possible to the living in the vines, gentle pruning, grassing, green manure and rare scratching interventions, only sulfur and as little copper as possible. And in my cellar there are no products, no filters, no detergents, a manual press, vats with distillation. floating hats and not even a pump! I vinify most gently and slowly. possible listening, without adding anything or taking anything away.
