Goyo García Viadero is a winegrower, his family owns the Bodegas Valduero founded in the 80s, he worked there for a while alongside his sisters, he could have devoted himself to running the family business, but he decided to stand on his own two feet, because he wanted to do otherwise Very inspired by winemakers like Pierre Overnoy, Goyo started producing his own wines in 2003, made according to these models and his convictions: wine is made in the vineyard and not in the cellar, he is obsessed with the ways of working from the past, he wants to let the vine - rather than each grape variety - express itself fully. He exploits tiny plots of very old vines (the average age is over 80 years), near the town of Roa, in the northern part of the Ribera del Duero, almost 900 meters away, all planted with white grapes ( albillo), on different types of soil and altitude. He first harvests the whites for acidity, then co-ferments the 2 grape varieties together, as tradition dictates in Ribera del Duero. His philosophy is very simple: go back to the origins, less chemicals, more viticulture, less maturation, less extraction, less wood, less intervention. All the grapes are destemmed, fermented exclusively with indigenous yeasts, and nothing is added during the aging (including SO2). The wines are aged in old French barrels and bottled with a minimum of manipulation.
