In the Vineyard Biodynamic agriculture is based on a very close relationship between man and the vine. Without the use of fertilizers and chemicals it is impossible to 'manage' production, so one is led to carefully observe the plants and the soil and to respect their times. In a sense it is the vineyards that guide us, not the other way around. In our company we take into account the rhythms of astral cycles and their influence on plants and, through the use of the biodynamic calendar, we plan the various agricultural activities in order to re-establish the right connection between heaven and earth and obtain better products in terms of quality. and healthiness. For this we use biodynamic preparations, starters that favor the interaction between the soil and the vine. These are used at specific times of the year to energize and revitalize the soil and plants. The preparation 500 (cornoletame) for example is used to trigger the processes of humus formation and the 501 (cornosilica) to stimulate the functions of light and heat. Both preparations are dynamized and then sprayed on the soil and plants. In the winter period when the earth, in the inhalation phase is resting, we practice green manure. It is the cultivation of a mixture of herbs, each of which performs a specific regenerative and improving function of the soil. In the basement: When we bring the grapes to the cellar it is a pure expression of territoriality and we want it to remain so during processing until bottling, so we do not use external laboratory yeasts or from other sources. Fermentation, that is the transformation of grape sugar into alcohol, occurs naturally. We manage the work in the cellar without the use of additives or clarifying substances. Furthermore, the wine is generally not filtered and the sulfur content is at a minimum so as to preserve the originality and goodness of our grapes. With biodynamic methods, expressions of maturity of the vine are achieved that are deeply linked to the earth, the climate of the year and the varietal stamp of the plant. This is expressed in its entirety, complexity of aromas and sugars in a more complete and profound form, an expression of a territorial uniqueness from which a unique and simply not reproducible wine is obtained. The result in the bottle is an extremely marked character that always surprises for the great taste experience which is generally very direct. These are wines that vary from year to year, are never the same and are able to surprise even the most expert of tasters in a pyrotechnic way.
